A few weeks ago I posted about our lack of fondness for gingerbread at Christmas. As a bakery we have stayed well away from the gingerbread, choosing instead to develop all sorts of buttery, vanilla biscuit products instead.
But we’re always on the look out for new delicious treats for our lovely customers and we’re not too big to eat humble gingerbread (!) so this week we decided to do a massive U turn and open ourselves up to the possibility of a gingerbread filled festive period!
We tested (and tasted!) many recipes from light to spicy and finally settled on a dark treacle dough with lots of aromatic christmassy spices. The bakery is the most wonderful place to be when we have gingerbread on the go – the most amazing aromas wafting through the building.
